Allevamento e alimentazione nella Cisalpina romana: un primo bilancio tra Archeologia e Archeozoologia

Il testo si propone di offrire un quadro di sintesi preliminare delle conoscenze archeozoologiche nel settore centro-orientale della Cisalpina romana, procedendo mediante l'analisi comparativa dei dati noti ed editi relativi a circa trenta contesti diversi: città, abitati minori, ville/fattorie. Pur tenendo ben presente la specificità di ogni sito, è stato possibile così evidenziare le strette relazioni che la gestione degli animali intrattiene con le caratteristiche ambientali, i sistemi economici e le abitudini alimentari. I dati disponibili hanno permesso di ricostruire soprattutto alcuni aspetti legati al 'consumo' della risorsa animale nella Cisalpina romana, che mostra una netta predilezione per ovini e suini, ma con specificità locali; attraverso l'analisi del consumo si è tentato di ricostruire anche la 'produzione' della risorsa animale, legata alla vocazione ambientale, pur nella consapevolezza della notevole incidenza dei fattori di natura politica, economica e culturale implicati nella complessa relazione produzione-distribuzione-consumo.

The paper aims to offer a preliminary framework of knowledge on zooarchaeological topics in the Norh-Eastern Italy during the Roman age, proceeding through a comparative data analysis from about thirty different contexts: cities, towns villas and farms. Considering the specificity of each site, it has been possible to highlight the close relationship between the management of the domestic and wild animals and the environment, the economic systems and the eating habits. The available data allowed to reconstruct above all some aspects related to the 'consumption' of the animal resource in the Roman Cisalpine, which shows a clear predilection for sheep and pigs, but with local specificities; through the analysis of consumption it has been attempted to reconstruct also the 'production' of the animal resource, linked to the environmental vocation, even in the awareness of the considerable incidence of the political, economic and cultural factors involved in the complex production-distribution-consumption relationship.
